Vinification: Hand harvest, fermentation in stainless steel vats at a controlled temperature between 12 and 14ºC, followed by a short aging in stainless steel. The second fermentation took place in the bottle for a period of 12 months with remoage and subsequent degorgement (Classic Method).
Tasting Note: It has a citrine color, fine and persistent bubbles. On the aromatic level, it reveals citrus notes and some apple green. In the mouth, a perfect harmony between the well-marked acidity and the mineral character, showing all its freshness in a lively and elegant finish.
