Vinification: Total destemming followed by gentle pressing of the cold masses. Static decantation of the must and fermentation in stainless steel vats, at low temperature, until halfway through. Remaining part of the fermentation was carried out in used oak barrels. Aged for 6 months in barrels with weekly batonnage.
Color: Bright straw yellow.
Aroma: Very intense and expressive, mineral and complex. Shows aromas of stone fruit (apricot), tropical aromas and orange peel, integrated with hints of brioche and vanilla.
Palate: Very complex and voluminous, combining the typical flavors of the variety (tropical and citrus), with toasted and vanilla notes. Crispy acidity balancing the whole very well. Very long fresh finish. Very gastronomic.
Gastronomic Suggestion: Grilled Scallops, Grilled Sea Bass, Cod, Shrimp Linguine, Baked Chicken.
