Aroma: Nuances of white pulp fruit jelly, exotic fruits. Intense notes of oatmeal, vanilla, toasted cereal and soft caramel.
Taste: Complex with an extraordinary volume in the mouth, unctuous and with a long persistence.
Vinification Process: Total destemming, natural static decantation. 50% of the batch was fermented in new light toasted French oak barrels, the rest in stainless steel.
Maturation: 12 months in barrel and 6 months of minimum ageing after bottling.
Longevity: 5 to 7 years.
Serving Suggestions: It goes well with spicy charcuterie, oven-roasted fish, roasted or stewed white and red meats and medium-structure cheeses.
